The dove is the typical sweet that enriches the table to celebrate the Passover. The traditional sweet, soft and fragrant, covered with sugar grains and almonds, provides in the’ dough l’ use of the candied fruit, even if, in reality, there are many of them, those who do not appreciate them. To prepare 500 g. of a dove you will need 250 grams of flour 0, 50 ml of water, 10 g yeast, 85 g sugar, 3 egg yolks, 15 ml of milk, 100 gr butter, 1 spoon of vanilla essence, the grated peel of 1 lemon, the grated rind of an orange, 1 pinch of salt and 50 gr of chocolate drops. For the icing 1 egg white 25 gr sugar, 25 gr granulated sugar 30 g. of peeled almonds.
once you have procured all the ingredients, begin your preparation by dissolving the yeast in the’ of water, then add 75 grams of flour and knead, then cut a cross on the dough ball and transfer to a container with hermetic closure filled d’ of water and left alone for 30 minutes ( when will rise to the surface). Then in a large bowl place the rest of the flour, the egg yolks, the sugar, the soft butter, the vanilla, the lemon peels and orange and a pinch of salt and knead, adding the milk to make the mixture workable.
